    When I’m not walking the corgis while listening to an audiobook, I’m in the kitchen working on my latest recipe hyper fixation. Recently, I’ve been very vegetable focused, trying out new ways to cook everything from carrots to radishes to brussels sprouts. I’ve rarely met a vegetable that I didn’t like, but I always love to discover a new-to-me way to cook them.

    The moment I saw The Modern Mountain Cookbook, I knew it was a book for me. Brandenburg shares dozens of delicious vegan recipes that celebrate Appalachian cuisine. She centers her recipes on quality ingredients handled with care, teasing out every last morsel of flavor. The recipes are easy to follow and delicious. I know I’ll be returning to this cookbook again and again. As a bonus, it is packaged with a colorful cover and adorable endpapers, it’s a beautiful book.
